Richard Sandoval
Richard Sandoval is a chef and restaurateur, in addition to being an entrepreneur, part-time TV personality, and cookbook author. Focused on contemporary Latin cuisine, he incorporates techniques, ingredients and flavor profiles spanning continents. Sandoval presides over Toro Riviera Maya, located at The St. Regis Kanai Resort, Riviera Maya, which won The World Culinary Award for Latin America's Best New Restaurant 2024.
Francisco “Paco“ Ruano
Guadalajara-born, award-winning Chef Francisco Ruano is the phenom behind Guadalajara's beloved Alcalde. A master of both Basque and Mexican Cuisine, Ruano has vast experience in top European kitchens which he brings to The Riviera Maya EDITION at Kanai and to his own innovative, boldly-flavorful cuisine at KI'IS.  In 2022, Ruano opened Ojo in Bangkok, at the summit of the city's tallest building.
Tomás Bermúdez
Chef Tomás Bermúdez fuses Meditteranean and Mexican cuisine with delectable results at seafood-forward SO’OL, The Riviera Maya EDITION at Kanai. Chef Tomás has considerable experience in Agentina and, like his friend Paco Ruano, in Europe. Endlessly searching for the very best, most sustainable ingredients, Bermúdez has forged relationships with the highest-quality, most responsible producers and suppliers.
